Tonight I have gone further east to Italy. It is another very simple dish. Italian lemon chicken. Plus an oven baked potato and some grilled mushrooms.
If you cook a whole Italian chicken, you make a slit between the skin and the chicken and stuff the sliced lemon into the pouches. More into the body, along with some fresh rosemary.
As I am dining alone tonight, things get even simpler. A single chicken breast which has been marinading in slices of lemon, dried rosemary, and a twinge of olive oil.
Nothing can go wrong.
